Why Brownies Sink in the Middle
A small amount of settling is normal in dense brownies. Melted chocolate and fat contract as they cool, and a paper-thin crust can wrinkle. A dramatic crater, however, usually means the centre expanded before it had enough structure to support itself.
The diagnosis should focus on why the centre was weak at the moment the batter stopped expanding.
The centre may be underbaked
A deep layer takes longer for heat to reach the middle. If the brownie is removed while the centre is still fluid, steam and trapped gases escape as it cools and the unsupported centre can fall.
Check pan dimensions and batter depth before assuming the recipe needs more flour.
Too much aeration can create an unstable rise
Whipped eggs or heavily creamed butter can trap more gas than a dense brownie formula was designed to support. The batter rises in the oven, then falls when those bubbles collapse.
For fudgy brownies, mix thoroughly enough to emulsify without chasing cake-like volume.
Excess leavening causes similar problems
Baking powder or baking soda produces gas. If there is too much gas relative to the batter’s structural strength, the brownie can dome and then collapse.
Measure small leavening quantities carefully. Doubling a recipe does not justify an improvised extra spoonful.
Opening the oven early is not the only explanation
A sudden temperature drop can contribute to collapse when the centre is marginally set, but opening the door is often blamed for a problem rooted in formula or depth.
If the same pan sinks every time at the correct temperature, inspect ingredient ratios and doneness before treating the oven door as the main cause.
Normal settling versus failure
A dense brownie may finish with slightly raised edges and a flatter middle. That appearance alone is not failure if the cooled centre is cohesive and properly textured.
A gummy, liquid crater points to underbaking or imbalance; a shallow wrinkle can simply be the crust contracting over a fudgy centre.
