Why Brownies Turn Dry or Crumbly
Dry brownies usually lose too much water during baking or begin with too much structure for the amount of fat and sugar in the formula. The cause can be as simple as ten extra minutes in the oven, but measurement and pan substitutions are equally important.
Crumbly is slightly different from dry. A brownie can contain enough moisture yet fall apart because its binder or structure is weak. Diagnosing texture therefore requires looking at both moisture and the ingredient balance.
Overbaking removes more water than the recipe intended
Brownies continue cooking while the pan is hot. Waiting for a completely clean toothpick can push a fudgy recipe beyond its intended endpoint. By the time the centre gives no moist crumbs, the edges may already have lost too much moisture.
Start checking near the lower end of the recipe range. A dense brownie usually finishes cooling and setting outside the oven.
Too much flour changes the ratio
Scooping flour directly with a measuring cup can compact it and produce more flour than a recipe developer intended. A scale avoids that variation.
Extra flour absorbs water and creates more starch and gluten structure. Even a brownie that looks properly baked can therefore feel dry and bread-like.
Cocoa substitutions can make batter leaner
Replacing melted chocolate with cocoa powder removes cocoa butter and changes sugar and dry-solid levels. Adding cocoa to make a brownie “more chocolatey” without compensating for its absorptive dry solids can also thicken the batter.
Use a formula designed for the cocoa level you want rather than treating cocoa as a flavouring that can be added without consequence.
A larger pan makes a thinner brownie
The same quantity of batter spread over more area produces a thinner layer. Thin brownies reach their final internal state sooner and expose more batter to hot pan surfaces.

Storage can mimic overbaking
Cut brownies lose moisture faster than an intact slab because more surface area is exposed to air. Refrigeration can also make butter- and chocolate-rich brownies feel firmer and drier while cold.
Store cooled brownies in an airtight container and judge texture near the serving temperature intended by the recipe.
