Brownie doneness guide
Choose the texture you are aiming for, then move through the visual cues. Brownies do not all finish at the same toothpick stage, so the guide combines edge set, centre movement, crumb appearance and cooling behaviour.
Why a clean toothpick can be misleading
A completely clean skewer is a useful endpoint for many cakes, but dense brownies often finish earlier. Chocolate, sugar and fat keep the centre moist, and cooling firms the structure further. Waiting for every trace of moisture to disappear can push a fudgy brownie into dryness.
Cooling is part of the final texture
A brownie that is correctly baked for a fudgy centre can still feel very soft when hot. Chocolate and fat firm as the slab cools. If the centre is no longer liquid and the edges are set, allow the brownie to cool before deciding that it failed.
