  1. Heat oven to 175°C/350°F and line the specified pan with parchment. Prepare any coffee, citrus zest, chocolate chunks or other flavour component before mixing the batter.
  2. Melt the butter and chocolate when both are listed. For cocoa-forward recipes, whisk cocoa into the warm fat so it disperses without dry pockets.
  3. Whisk in sugar and eggs until the batter is smooth and cohesive. Add vanilla, espresso or other concentrated flavouring at this stage.
  4. Fold in flour, cocoa and salt only until combined, then add chocolate pieces or other inclusions. Spread to an even depth.
  5. Bake until the edges are set and the centre gives the doneness cue appropriate to the listed texture. Cool fully before judging texture or cutting.
