  1. Heat oven to 175°C/350°F. Line the pan with parchment.
  2. Melt butter and chocolate gently, then whisk in half the sugar while warm.
  3. Whisk eggs, yolk, remaining sugar and vanilla until slightly thickened, then slowly whisk in the chocolate mixture.
  4. Fold in flour, cocoa and salt only until no dry streaks remain.
  5. Bake until the edges are set and the centre gives moist crumbs on a skewer. Cool completely before slicing.

Why this formulation works

Sufficient dissolved sugar and egg proteins help form the fragile surface film, while the relatively low flour level keeps the centre dense rather than cake-like.

Pan, doneness and texture
