Orange Dark Chocolate Brownies
Orange zest provides aromatic oils without adding the water that a large amount of juice would introduce. The recipe is built for a Fudgy result in a 8×8-inch.

Ingredients
- 150 g butter
- 170 g dark chocolate
- 225 g sugar
- 2 eggs
- 85 g flour
- 25 g cocoa
- finely grated zest of 1 orange
Method
- Heat oven to 175°C/350°F and line the specified pan with parchment. Prepare any coffee, citrus zest, chocolate chunks or other flavour component before mixing the batter.
- Melt the butter and chocolate when both are listed. For cocoa-forward recipes, whisk cocoa into the warm fat so it disperses without dry pockets.
- Whisk in sugar and eggs until the batter is smooth and cohesive. Add vanilla, espresso or other concentrated flavouring at this stage.
- Fold in flour, cocoa and salt only until combined, then add chocolate pieces or other inclusions. Spread to an even depth.
- Bake until the edges are set and the centre gives the doneness cue appropriate to the listed texture. Cool fully before judging texture or cutting.
Why this formulation works
Orange zest provides aromatic oils without adding the water that a large amount of juice would introduce.
Pan, doneness and texture
The listed pan is part of the formulation. Moving the same batter into a pan with a different base area changes average batter depth and therefore changes the relationship between edge and centre cooking. Use the pan converter before substituting a substantially different size.
For fudgy and chewy styles, a completely clean skewer can indicate that the centre has baked beyond its intended texture. Look for set edges and a centre that is no longer liquid, then allow the slab to cool before making a final texture judgement.
Recipe notes
- Use weight measurements for the most repeatable result.
- Pan size and material affect batter depth and edge behaviour; use the pan converter before substituting a substantially different pan.
