One-Bowl Pantry Cocoa Powder Brownies
A practical cocoa-only brownie made from common pantry ingredients without melted chocolate.

Ingredients
- 140 g unsalted butter, melted
- 230 g granulated sugar
- 2 large eggs
- 1 tsp vanilla
- 65 g natural cocoa powder
- 95 g all-purpose flour
- 1/2 tsp fine salt
Method
- Heat oven to 175°C/350°F and line pan.
- Whisk hot melted butter with sugar and cocoa until smooth.
- Whisk in eggs one at a time and add vanilla.
- Fold in flour and salt until just combined.
- Bake until edges set and centre gives moist crumbs. Cool fully.
Why this formulation works
Blooming cocoa in warm butter helps disperse cocoa solids and intensifies chocolate aroma. A modest flour quantity keeps the texture dense.
Pan, doneness and texture
The listed pan is part of the formulation. Moving the same batter into a pan with a different base area changes average batter depth and therefore changes the relationship between edge and centre cooking. Use the pan converter before substituting a substantially different size.
For fudgy and chewy styles, a completely clean skewer can indicate that the centre has baked beyond its intended texture. Look for set edges and a centre that is no longer liquid, then allow the slab to cool before making a final texture judgement.
Recipe notes
- Natural and Dutch-process cocoa differ in acidity and flavour; this recipe has no chemical leavener, so either can work, though flavour will change.
Allergens: Egg, milk, wheat. Check every packaged ingredient because formulations and cross-contact statements vary by brand.
