Ingredients
- Thin brownie base: butter, chocolate, sugar, egg, flour. Filling: 900 ml ice cream. Finish: ganache or berries
Method
- Heat oven to 175°C/350°F and line the base of a 9-inch springform pan.
- Mix the thin brownie base and spread it evenly across the pan. Bake until set; a thick underbaked layer becomes too hard to slice once frozen.
- Cool the brownie base completely, then freeze the pan for 20 to 30 minutes.
- Soften the ice cream only until spreadable. Pack it evenly over the cold brownie base and smooth the top without overworking it.
- Freeze until firm. Add ganache or berries shortly before serving and let the pie stand briefly at room temperature so the brownie base can be cut cleanly.
