Bakery-Style Chewy Cocoa Brownies
A cocoa-forward brownie with brown sugar, oil and an extra yolk for a resilient, chewy bite without becoming dry.

Ingredients
- 115 g unsalted butter, melted
- 45 g neutral oil
- 180 g granulated sugar
- 100 g light brown sugar
- 2 large eggs plus 1 yolk
- 2 tsp vanilla
- 85 g Dutch-process cocoa
- 120 g all-purpose flour
- 1/2 tsp fine salt
- 100 g dark chocolate chips
Method
- Heat oven to 175°C/350°F and line the pan.
- Whisk melted butter, oil and both sugars until glossy.
- Add eggs, yolk and vanilla; whisk until cohesive.
- Fold in cocoa, flour and salt, then chocolate chips.
- Bake until edges are firm and centre is set but still soft. Cool at least 90 minutes.
Why this formulation works
Brown sugar contributes moisture-retaining sugars while oil remains liquid at room temperature, helping the crumb stay pliable. The extra yolk adds fat and emulsifiers without as much additional egg white protein.
Pan, doneness and texture
The listed pan is part of the formulation. Moving the same batter into a pan with a different base area changes average batter depth and therefore changes the relationship between edge and centre cooking. Use the pan converter before substituting a substantially different size.
For fudgy and chewy styles, a completely clean skewer can indicate that the centre has baked beyond its intended texture. Look for set edges and a centre that is no longer liquid, then allow the slab to cool before making a final texture judgement.
