Brownie Pan Size Guide: Area, Depth and Recipe Scaling
Pan labels hide the number that matters most when you want to preserve brownie thickness: base area. An 8×8-inch pan and a 9×9-inch pan differ by only one inch in each direction, but their areas are 64 and 81 square inches. That is about a 26.6% increase.
If you move the same batter into the larger pan, the average layer becomes markedly thinner. The brownie may bake faster, develop more edge relative to centre and lose moisture sooner.
How to calculate rectangular pan area
Multiply inside length by inside width. An 8×8-inch pan has 64 square inches of base area; a 9×13-inch pan has 117. Dividing target area by source area gives a useful batter-scaling factor.
For an 8×8 recipe moved to 9×13, 117 ÷ 64 is approximately 1.83. Using about 1.83 times the batter preserves similar average depth if the pans have comparable usable shape and wall geometry.
How to calculate a round pan
For a round pan, area equals π × radius². A 9-inch round pan has a radius of 4.5 inches and an area of about 63.6 square inches, remarkably close to an 8×8 square pan.
That does not make the pans identical. Corners, wall angle, material and actual fill height affect edge behaviour, but area gives a much better starting point than guessing by diameter.
Why pan depth still matters
Area tells you the footprint, not the available height. A shallow pan can overflow when a high-volume recipe expands, while a very deep pan may change how heat reaches the centre.
For brownies, the relevant question is both whether the batter fits safely and whether its average depth stays close to the original recipe.
Common conversion examples
8×8 to 9×9: multiply batter by about 1.27 to preserve depth. 8×8 to 9×13: multiply by about 1.83. 9×9 to 9×13: multiply by about 1.44.
These factors scale batter quantity, not baking time. Time does not scale linearly with area because heat transfer, material, depth and recipe composition all matter.
