How to interpret the model
The explorer estimates direction rather than predicting an exact crumb. More flour and egg-white structure generally increase firmness and cake-like structure. More fat and yolk tend to increase tenderness and richness. Sugar can soften texture and retain moisture while also influencing surface crust. Aeration and leavening increase lift when the surrounding structure can support the bubbles.
The controls are intentionally relative. A value of 80 does not mean “80 grams” or “80 percent.” It means you are asking the model to treat that factor as substantially higher than the balanced reference point.
Use it with a real recipe
After exploring a direction, use the Brownie Builder to choose a tested recipe that already targets the texture you want. If you change a real recipe, adjust one major variable at a time and keep the pan constant so you can tell what caused the difference.
